Ingredients

  • 2 cups kiwi puree

  • 2 tablespoons sugar

  • 2 large eggs

  • 1 cup sugar

  • 2 cups heavy cream, or whipping cream

Preparation

  1. Place the kiwi puree into a bowl.

  2. Stir 2 tablespoons sugar into the puree, cover, and refrigerate 1 hour.

  3. Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes. Whisk in 1 cup sugar, a little at a time, then continue whisking until completely blended, about 1 minute more.

  4. Pour in the cream and whisk to blend.

  5. After 1 hour cooling in the refrigerator, stir the kiwifruit into the egg, sugar, and cream mixture.

  6. Transfer the mixture to an ice-cream maker and freeze following the manufacturer's instructions.
