Ingredients
12 baby siam
1 tablespoon salted butter
1 white onion, chopped.
2 eggs
4 tablespoon parmesan cheese, grated.
salt to taste
Preparation
Start by preheating your oven to 350°F (175°C).
Bring a large pot of salted water to a boil. Wash the Baby Siam and slice them in half lengthwise. Boil for 10-15 minutes until tender, then let them cool.
Scoop out the Baby Siam filling without damaging the shells. Mash the filling until creamy and set aside.
In a skillet, melt salted butter over medium heat. Add finely chopped white onions and cook for 5-10 minutes until soft and caramelized. Set aside.
In a small bowl, whisk the eggs with a pinch of salt. Combine the mashed Baby Siam filling, sautéed onions, and 3 tablespoons of grated Parmesan cheese.
Stuff each Baby Siam shell with the cheesy mixture and top with remaining Parmesan cheese.
Arrange the stuffed Baby Siam boats on a baking sheet and bake at 350°F for 30 minutes until golden and bubbly.
