Ingredients
1 pound shredded carrots
4 eggs
¼ cup all-purpose flour
¼ cup bread crumbs
1 clove garlic, minced
½ teaspoon salt
1 pinch ground black pepper
2 tablespoons vegetable oil
Preparation
Mix shredded carrots, eggs, flour, bread crumbs, garlic, salt, and pepper together in a medium mixing bowl until well combined. Form into patties.
Heat oil in a frying pan over medium-high heat. Add patties and fry until golden brown on each side.

Can I make them vegan?
Yes! Replace eggs with a flaxseed or chia seed mixture (1 tablespoon of seeds mixed with 2.5 tablespoons of water per egg) to make a vegan version.
