Ingredients
about 2 cups black cherry tomatoes
2-3 tablespoons olive oil
2 cloves garlic, minced
Salt and pepper, to taste
Fresh herbs (optional), such as thyme or rosemary
Preparation
Preheat your oven to 275°F (135°C).
Place the black cherry tomatoes on a baking sheet lined with parchment paper or aluminum foil.
Drizzle the olive oil over the tomatoes, then sprinkle with minced garlic, salt, and pepper. Toss gently to coat the tomatoes evenly.
Spread the tomatoes out in a single layer on the baking sheet. If using, sprinkle fresh herbs over the tomatoes.
Place the baking sheet in the preheated oven and roast the tomatoes for about 2 to 2.5 hours, or until the tomatoes are shriveled and slightly caramelized, but still juicy.
Remove from the oven and let the tomatoes cool slightly before serving.
