Frozen purple sweet potato fries
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1/4 cup grated Parmesan cheese
1 tablespoon lemon zest
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh parsley (optional, for garnish)
Preparation
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
In a large bowl, toss the sweet potato fries with olive oil, garlic powder, onion powder, salt, and pepper until they are evenly coated.
Spread the seasoned fries in a single layer on the prepared baking sheet. Bake for 25-30 minutes, or until the fries are crispy and golden, turning them halfway through for even cooking.
While the fries are baking, mix the grated Parmesan cheese, lemon zest, and lemon juice in a small bowl.
Once the fries are done baking, remove them from the oven and immediately toss them with the Lemon Parmesan mixture until well coated.
